Make Calamari

When it comes to fried calamari, freshness is everything. And you’ll never find it fresher than by making it yourself!

     
  1. Wash the tentacles and mantles (tubes) in cold water and drain. Separate the tentacles from the mantles.  
       
  2. Remove the tips of the mantles with a sharp knife, forming a tube.  
       
  3. Cut the mantle lengthwise.  
       
  4. Open and spread the mantle flat.  
       
 

5. Cut in to ½-inch strips and set aside.

 

 
       
  6. Use a paper towel to pat the calamari dry.  
       
  7. Dredge the calamari in flour and shake to remove the excess.  
       
  8. Place the calamari in oil preheated to 375 degree. Cook until pale golden, 2–3 minutes. Don’t overcook or it may become tough.  
       
 

9. Remove the calamari with a slotted spoon and place it on the paper towels to drain.

Salt to taste.

 
       
  11. Serve with fresh lemons or your favorite dipping sauces.
