Mmmmmuffins! Delicious little quickbread gems that are easy to throw together. Perfect to bake up fresh for breakfast or pop in the oven for afternoon tea.
What’s the difference between muffins and cupcakes? As a rule, muffins call for combining all dry ingredients in one bowl, and wet ingredients in another. The two mixtures are then quickly folded together. Also, muffins usually contain less sugar than cupcakes. Cupcakes are made just as you would prepare a cake, mixing well to add air for leavening and to create a lighter crumb. In addition, cupcakes usually wear a frosting hat.
Both Chocolate Raspberry and French Breakfast Muffins follow the classic preparation methods and require a gentle touch to avoid overmixing the batter. Chocolate Raspberry Muffins are low in sugar but high in taste. A healthy scoop of cocoa blends with frozen raspberries for a deeply flavored treat that will fuel your morning or jazz up the afternoon blues. French Breakfast Muffins are a treasured favorite. First perfected by my sister and me when we were old enough to play with the oven, these treats are best eaten fresh and warm. A quick dip in butter and cinnamon sugar produces a rich, doughnut-like outside to complement the light, nutmeg-scented interior.
Unlike most muffins which require gentle folding, Breakfast Power Muffins are indestructible and can be glommed together in just about any manner. Using your hands to mix them up yields peanut butter-soft hands. These are a hearty way to start the day and as an added bonus are wheat, sugar and dairy-free – without tasting like something your crazy hippie neighbor dreamed up. Adding a bit of chocolate and delicious dried cranberries or cherries sparks even more interest.
