Pistachio and Chocolate Semifreddo
Nougat Glacé with Raspberry Coulis
Luscious, lovely clouds of frozen fluff. Semifreddo and nougat glacé are delicious frigid treats made without an ice cream maker. The secret is whipped cream, which incorporates air into the desserts and prevents them from freezing into solid chunks in the freezer.
This month, try a simple Italian semifreddo (it means “half cold” in Italian) or a more challenging French nougat glacé (frozen cream with nut brittle).
The semifreddo combines beaten egg whites with whipped cream, roasted pistachios and bittersweet chocolate. Whip, fold and freeze. Delicious with a glass of moscato, Italian dessert wine
The nougat glacé takes the egg whites one step further by adding structure to the meringue with hot honey. Fold in whipped cream and add a bit of sweet crunch with almond brittle. Grand Marnier adds the finishing touch to this classically delicious French dessert.
