Tips and Ideas

  1. Press chopped, toasted nuts, mini chocolate chips or crushed candy around the edges of the ice cream.

  2. Once the sandwiches have firmly frozen, use a sharp cookie cutter to cut them into shapes. Or, cut the cookies beforehand and shape the ice cream to fit.

  3. Any variety of lusciousness can be folded into softened ice cream; Junior Mints, peanut butter cups, shredded chocolate, toasted nuts, fresh fruit (cherries are great!) or liqueur—not too much of this or the ice cream won’t freeze solidly.

  4. Don’t overbake the cookies; chewy cookies make for easy-to-eat sandwiches.

  5. Solidly frozen ice cream is easy to cut into perfect-sized 1-inch slabs that will fit in between the cookies.

  6. A variety of mini cookies sandwiching ice cream in assorted flavor combinations are a stellar treat.

Ice Cream Sandwiches
with Fabulous Cookies



Biting through a homemade cookie and meeting the luxurious velvet of ice cream, what better way to seal a hot summer night? Ice cream sandwiches are the perfect handheld pairing of two summer favorites. Below are a few particularly decadent creations that recall childhood while incorporating grown up flavors. Yum.

Many combinations can be culled from ice cream and cookies recipes found throughout the site. I’ve thrown in a few new cookie “keepers” as well; a classic chocolate chip, oatmeal full of plump raisins and the perfect ice cream sandwich chocolate wafer. As for the ice cream, if homemade is too much of a time stretch, a quart of store-bought and doctored up ice cream will work handily.
