Roast Sweet Potatoes and Yams

Sweet potatoes and yams are widely known as one of autumn’s great delights. In fact, they’re so closely associated with the fall that few people realize their season actually begins in July. What’s more, these orange beauties canand should be enjoyed all year long in dozens of scrumptious presentations.
     
 

1. Pre-heat oven to 350-degrees. Place the sweet potatos or yams in a shallow pan.

 
       
 

2. Create steam vents by poking them several times with a sharp knife or fork.

NOTE: Do not skip this step or they may expode creating a huge mess.

 
       
  3. Roast for 45 minutes or until they soften. Test for doneness by inserting a fork into them. If it comes out easily, then it is done.  
       
 

4. Cool them before attempting to peel so that you don’t burn yourself with the steam.

 

 

 
       
 

5. Cut or mash the roasted sweet potatoes or yams with a hand-held ricer, blender, or food processor.

Top with a sprinkling of brown sugar, pure Vermont maple syrup, honey, or butter. Then againthey are heavenplain.
