Date and Nut Bread

I resurrected this classic from my mother’s old recipe file. One taste, and you’ll know why it was one of her favorites.

Ingredients
Serves
2 cups dates
1 1/2 cups boiling water
2   eggs
1 1/2 cups sugar
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
2 tablespoons butter, melted
1 cup toasted nuts, chopped
 
 
Directions 
 

Preheat oven to 350 °

Grease and Flour a 9x5 loaf pan.

  1. Pit and chop the dates in large pieces and place them in a bowl. Pour the boiling water over and allow the dates to soak for 30 minutes.
  2. Beat the eggs and sugar together until thick and pale yellow.
  3. Sift the flour, baking soda, and salt together in a spacious mixing bowl.
  4. Stir the eggs, flour mixture, and butter together until combined.
  5. Stir in the nuts, dates, and water.
  6. Pour the mixture into a greased and floured 9x5-loaf pan and bake for 1 hour or until a knife inserted in the center comes out clean.
  7. Remove from the oven, let sit for 10 minutes, and then turnout onto wire cooling racks.
  8. Eat the bread warm or at room temperature. It is especially good with butter or cream cheese.

 

 

Preparation time: 1 hour and 15 minutes plus 30 minutes down time.
