Preheat oven to 325 °
1. In a small bowl whisk together the oil, sweetener and vanilla. In a medium bowl combine oats, nuts, spices and any other add-ins except for dried fruit.
2. Gently combine wet and dry mixtures making sure oats and nuts are evenly coated.
3. Spread the granola evenly on the prepared sheet and bake for 15 minutes.

Remove from the oven and flip and stir the granola. Return to the oven and bake for about 10-15 minutes more, until golden brown.
5. Let cool completely on the baking sheet then add dried fruit.
6. Store in an airtight container for up to a week. Do not refrigerate.
