Blueberry Clafouti recipe  
Blueberry-Orange Clafouti
Incredibly quick and easy to prepare, traditional French clafoutis is a wonderful way to showcase your favorite summer fruit. The dish is informal by nature, and has a special rustic charm when baked in a skillet. Serve with a dollop of whipped cream if you’re feeling truly decadent.

Ingredients
Serves 8
1 tablespoon butter
1 1/4 cups buttermilk
6   eggs
3/4 cup sugar
1 tablespoon vanilla
2 tablespoons Cointreau
1   orange, zested
1/8 teaspoon salt
3/4 cup flour
3 cups fresh blueberries*
NOTE: You can substitute thawed frozen blueberries. Blot off the extra moisture with a paper towel and lightly dust the berries with flour to prevent them from bleeding into the batter.
 
 
Directions 
 

Preheat the oven to 425 °

  1. Butter a nine-inch skillet and set it in the oven while you prepare the batter.

  2. Combine the buttermilk, eggs, sugar, vanilla, Cointreau, orange zest, and salt into a blender and process until well mixed.

  3. Add the flour and process until combined, about 30 seconds.

  4. Remove the pre-heated skillet from the oven and pour in the batter.

  5. Quickly sprinkle the blueberries evenly over the batter and return to the oven.
    .
  6. Cook for 30 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too fast, loosely cover it with a piece of aluminum foil.

  7. Remove from the oven and cool for 10 minutes. Dust with powdered sugar, spoon into individual bowls and serve immediately.

 

 

Preparation time: 35 minutes plus 10 minutes downtime.
