Quick and easy Classic Tiramisù Italian dessert recipe  
Classic Tiramisù

This is the real deal; the traditional Italian preparation using whipped egg whites and lots of strong espresso.

Ingredients
Serves 6
1 cup unsweetened espresso coffee*
3   eggs
1/3 cup plus 1 tablespoon sugar, divided
1 1/2 cups mascarpone cheese, room temperature
2 tablespoons Marsala or rum
1 14-ounce package crisp Italian ladyfingers (savoiardi)
1/4 cup unsweetened cocoa or grated bittersweet chocolate
     

*This equals approximately 8–10 shots of espresso. You also may substitute 2–3 tablespoons of instant espresso powder dissolved in 1 cup of water.

NOTE: Uncooked eggs may carry the risk of salmonella.  If salmonella is a concern in your area, pasteurized eggs (available in many supermarkets) may be substituted without affecting the recipe’s outcome. Also, try our Beyond Wonderful New Tiramisù with cooked eggs.

 
 
Directions 
 

 

  1. Separate the eggs, discarding 1 egg white. Place the other 2 whites in a bowl and add 1 tablespoon of sugar. Beat with an electric mixer until soft peaks form. Set aside.

  2. In another bowl beat the 3 egg yolks with 1/3-cup sugar until pale yellow and thick.

  3. Add mascarpone and rum or Marsala to the egg yolk mixture and blend until well combined. Gently fold in the egg whites.

  4. Dip the ladyfingers, one at a time, in the espresso and arrange them in a single layer in the bottom of a pretty 2-quart bowl. (This should use up about 1/3 of the cookies.) Cover with about 1/3 of the mascarpone mixture. Continue building until you have three layers of both ladyfingers and mascarpone.

  5. Dust the tiramisù with unsweetened cocoa or sprinkle with grated bittersweet chocolate. Refrigerate at least two hours, but ideally overnight.

Note: Uncooked eggs may carry the risk of salmonella. If salmonella is a concern in your area, try New Tiramisu, which uses a cooked custard.
